Minestrone vegetable soup

An Italian vegetable soup recipe cooked minestrone style. A pleasant fragrant aroma is given off that will make the mouth water.



Ingredients:

2 tablespoons vegetable oil
2 pounds/ 900 g beef for stew
1 cup chopped celery
¾ cup chopped onion
2 tablespoons chopped parsley
1 clove garlic
1 tablespoon pepper
1 tablespoon salt
½ teaspoon oregano, crushed
2 cans tomato sauce
1 quart/ 1 litre of water
1 cup broken spaghetti
1 ½ cups sliced zucchini
1 package (10 ounces/ 280 g) frozen peas, partially thawed

Method:
Heat oil in a large skillet. Add meat and brown on all sides, Push meat to the side, put celery, onion, parsley and garlic into fat and cook until celery is tender. Add seasonings and tomato sauce, stir to mix contents of skillet. Turn mixture into an electric cooker. Add water and stir. Cover and cook on Low 8 to 10 hours. Add spaghetti, zucchini and peas, stir. Cover and cook on High 30 – 45 minutes.

Produces about 10 – 12 servings
