Oxtail soup

Oxtail soup is rich in flavour and aroma. This soup recipe is easy to make and great to eat.



Ingredients:

1 oxtail (about 3 pounds/ 1. 4 kg, disjointed)
2 medium onions, peeled and sliced
2 large carrots, sliced
2 potatoes, cut in cubes
2 stalks celery with leaves, sliced diagonally
2 fresh tomatoes, peeled and sliced or 1 can of tomatoes
¼ cup regular barley
1 package oxtail soup mix
2 quarts/ 2 litres water.

Method:
Put oxtail pieces on rack of broiler pan and brown, turning as necessary.
Transfer oxtail to an electric cooker. Add remaining ingredients, stir. Cover and cook on low for 8 to 10 hours.

Produces about 8 servings.
