Spicy Cooker Chicken

Pieces of chicken cooked slow cooker style in a rich mixture of spices, chicken stock and fruit.


3 tbs butter
4 pounds/ 1.8 kg chicken (breasts and legs)
2 tbs flour
½ cup condensed chicken stock
1 can (16 ounces/ 450 g) fruit cocktail, drained (reserve ¼ cup syrup)
¼ tsp salt
¼ tsp turmeric
1/8 tsp each dry mustard, mace, cardamom, ginger
4 shreds saffron

Heat butter in a large, heavy skillet. Add chicken pieces and brown on all sides. Remove chicken from skillet to an electric cooker.
Blend flour into drippings in skillet. Heat until bubbly. Add chicken stock and fruit cocktail syrup gradually, stirring constantly. Continue stirring and bring to boil. Add fruit cocktail and seasonings. Pour over chicken in cooker. Cover and cook on Low 6 to 8 hours. Serve with rice.
