Chicken Fricassee with Vegetables

Pieces of chicken cooked in a mixture of vegtables slow cooker style.

2 cups sliced carrot
2 onions, peeled and quartered
1 chicken (about 3 pounds/ 1.5 kg), cut in serving size pieces
1 tsp salt
1 small bay leaf
A cup water
4 squashes, cut in halves lengthwise
6 ounces/ 170 g green beans, tips cut off
1 can (3 1/2 ounces/ 100 g) pitted ripe olives, drained
1 tbs cornstarch
2 tbs water

Put carrot and onion then chicken pieces, into a slow cooker. Add salt, bay leaf and water. Cover and cook on Low 4 – 6 hours. Add squashes and green beans to cooking liquid. Cover and cook on High 1-2 hours, or until chicken and vegetables are tender. Remove chicken and vegetables to a warm serving dish and add olives; keep hot. Blend cornstarch and 2 tbs water; stir into cooking liquid. Cook and stir until thickened. Pour gravy over chicken.
