Vegetable and Beans Mix

A simple vegetable and bean recipe made from lima beans, corn kernels, capscium, celery, mushroom soup and spices.



Ingredients:

1 can of 15oz / 420g tin, drained lima beans
1 ½ cups chopped onion
½ cup diced celery
2 cups frozen corn kernels
½ red capsicum
½ tsp garlic powder
¼ tsp dried basil
½ tsp salt
¼ tsp pepper
1 can cream of mushroom soup (10 oz/ 300 g can)
½ cup grated tasty cheese

Warning: Be careful with beans, especially red and white kidney beans. They contain a toxin which is not destoyed by slow cooking. Canned beans can be used as a safe alternative.

Method:
Combine all ingredients except cheese into a large bowl. Stir together well. Place into slow cooker. Cover and cook on Low for 8-10 hours or on High for 4-5 hours.
Stir, sprinkle with cheese before serving.

Serves 4
