Mandarin Rice Pudding

Rice pudding, mandarin orange sections and spices all combine to produce this aromatic slow cooker dessert recipe.



Ingredients:

2 ½ cups cooked rice
1 cup evaporated milk
1 cup drained canned mandarin orange sections (reserve ½ cup syrup)
½ cup packed light brown sugar
3 tbsp butter or margarine, melted
1 tsp vanilla essence
¼ tsp orange essence
2 eggs, beaten

Method:
Put rice, evaporated milk, mandarin orange syrup, brown sugar, butter, essence, and eggs into slow cooker. Stir thoroughly.
Cover and cook on High 2-4 hours.
Add mandarin oranges to cooker; mix. Cover and cook on High 15 minutes.

Serves 8
