Steamed Chocolate Pudding

A rich chocolate pudding recipe that is moist and rich in flavour.


1 1/3 cups flour
1 ½ tsp baking powder
½ tsp salt
2/3 cup butter or margarine
2 tsp vanilla extract
¾ cup plus 2 tbsp sugar
2 eggs
3 oz/ 90 g unsweetened chocolate, melted and cooled.
¾ cup milk
1 cup unblanched almonds, toasted and coarsely chopped.

Mix flour, baking powder and salt. Cream butter with extract until softened; add sugar gradually, beating constantly until blended. Beat in eggs, one at a time, until mixture is fluffy. Blend in chocolate. Beating just until blended after each addition, alternately add the dry ingredients in fourths and milk in thirds. Stir in the almonds. Turn batter into a buttered 2 pound tin. Cover with 4 – 6 layers of paper towelling. Set tin in a slow cooker. Pour 1 ½ cups boiling water around can. Cover and cook on High 2 – 4 hours.
Serve warm with ice-cream and or cream.
