Apple Sauce Cake

Apple cake made with apple sauce, nutmeg, cinnamon and raisins.


2 cups flour
1 tsp baking soda
1 tsp cinnamon
½ tsp cloves
½ tsp nutmeg
¼ tsp salt
½ cup butter
1 cup firmly packed light brown sugar
1 cup unsweetened applesauce
1 cup raisins

Mix flour, baking soda, cinnamon, cloves, nutmeg and salt.
Beat butter until softened. Add brown sugar gradually, creaming until fluffy. Alternately add the dry ingredients in fourths and applesauce in thirds to creamed mixture, mixing until blended after each addition. Mix in raisins.
Turn batter into a greased and floured cooker bake pan. Cover with lid. Set pan in slow cooker. Cover and cook on High 3-4 hours, or until cake tester or wooden pick comes out clean when inserted in centre, or top springs back when lightly touched.

6 – 8 servings.
