Corned Beef Dinner

Corned beef, potatoes, carrots, onions, cabbage and spices cooked in a slow cooker. A great recipe for the family.



Ingredients:

1 x 3 1/3 lbs / 1.5 kg corned beef
2 cups boiling water
2 whole cloves
1 tbsp / 15 ml brown sugar
1 bay leaf
¼ tsp / 1ml pepper

4 medium potatoes, peeled and cut into chunks
5 medium carrots, cut into chunks
2 medium onions, diced
1 small cabbage cut into approx 8 wedges

Method:
Stir the first 5 ingredients together in a bowl. Pour the liquid mixture into a 6 Litre slow cooker.
Place the corned beef in also.
Add the remaining 4 ingredients. Cover. Cook on Low for 10 to 12 hours or on High for 5 – 6 hours. Discard bay leaf at end of cooking time.
This can be served with a white sauce poured over the top.

Serves 12.
