Beef pot roast with vegetables

An easy to prepare slow cooker recipe for those in a hurry which uses a pot roast.


2 – 3 potatoes, sliced
2 – 3 carrots, sliced
1 – 2 onions, sliced
1 beef chuck under blade pot roast (about 4 pounds/ 1.8 kg)
salt and pepper
½ cup water or beef stock

Safety tips:
Please be aware that large cuts of meat heat slowly and have the potential to cause food poisoning. This risk can be reduced by cutting the meat into smaller pieces or by using metal prongs to heat the interior of the meat faster. Refer to cooking safely with slow cookers for more information.

Sear the meat in a large skillet or frying pan. Place several steel prongs into the meat. Put the vegetables into a slow cooker cooker. Season the seared meat with salt and pepper. Put into crock pot. Add water. Cover and cook on Low 8 – 10 hours, or until meat is tender.

About 6 servings.
