Creamy creole gumbo

A rich soup that is full of flavor. It has a relatively short cooking time and is easy to prepare.



Ingredients:

2 tablespoons butter or margarine
½ cup thinly sliced onion
¼ cup chopped green pepper
2 tablespoons flour
1 teaspoon salt
¼ teaspoon pepper
½ teaspoon leaf thyme
few drops Tabasco
1 can (7 ½ ounces/ 210 g) crab meat, drained
1 cup canned okra with liquid
1 can (16 ounce/ 450 g) tomatoes (undrained)
2 cups milk

Method:
Heat butter in a saucepan. Add onion and green pepper, cook until tender. Stir in flour and seasonings, heat until bubbly. Turn contents of saucepan into an electric cooker. Add Tabasco, crab meat, okra and tomatoes, mix.
Cover and cook on Low 1 hour. Add milk to cooker, mix. Cover and cook on low for 1 hour.

Produces about 1 ½ quarts/ 1 ½ quarts litres of soup.
